Birch Tapping Days

As early spring arrives, the sap begins to rise in Birch trees, and the branches, laden with its weight, start to sag—an ideal time to tap that delicious sap!

Over consecutive weekends in March, we gather in the woods to learn how to craft the tools you’ll need to tap a Birch tree. Once the trees are tapped, we can relax by the fire and wait for the sap to collect. Please bring a small container to take home some of the sap you harvest.
